3 cups peeled diced potato (if you use Yukon gold you don’t have to peel them)
½ cup diced carrots
½ cup GF whole oats
4 tbsp nutritional yeast (Non Fortified. I use Sari Foods Nutritional Yeast)
1 tsp onion powder
2 tsp garlic powder
2 tsp salt
1 ¼ tsp lemon juice
2-3 cups hot water
1). Boil potatoes and carrots together in a pot until soft, drain off water. Save the water to add back into the cheese sauce.
2). Add all ingredients to a high-speed blender, then add 2 cups of the reserved water and blend. Add more of the reserved hot water to thin to desired consistency.
NOTE: You can substitute oats for cashews or white beans. Both, in my humble opinion turn out a less superior sauce. I found it to be more gritty and more liquid. I like a thick substance for pasta dishes.
My preference is oats. Oats are 40-60% starch made of amylose and amylopectin which causes sauce to thicken. Also, Oats yield only .5 grams of fat for the entire batch of sauce.
Why Non Fortified Nutritional Yeast? Man-made, synthetic vitamins can be harmful and cause the liver and kidneys to work overtime and leave a more chemical taste.
